This is the ultimate fakeaway mash up, in my banging onion bhaji burger. Perfect if you are looking for a vegetarian option to a juicy burger. This is a firm family favourite in our household.
Ingredients
Onion Bhaji:
2 onions very thinly sliced
1 tsp. salt
1 tsp. garam masala
½ tsp. chilli powder
½ tsp. turmeric
1 tsp. mustard seeds
50g gram flour
20ml water
Cucumber slices
2 tbsp. mango chutney
2 brioche buns toasted
2 handfuls Fresh coriander
Mint and coriander yoghurt
Method
Place the onions into a bowl then sprinkle in the salt, mix then leave to stand for 15 minutes. Add in the spices and flour then enough water to make a thick batter, mix together gently. Divide the mixture into two and shape into patties. Take a large pan then shallow fry the bhajis in oil set to 160c for 6 minutes, turning half way through. Once cooked drain onto kitchen paper.
Build the burgers by spreading some mango sauce onto the base of the bun, add cucumber slices, the bhaji burger, some mint yoghurt and some fresh coriander.
