Everyone loves a spag bol right? This is a meal I grew up eating and it's still one of my favourites, I always enjoy mine with a good helping of garlic bread on the side. Enjoy.
Best Ever Spaghetti Bolognaise (serves 4)
500g beef mince (best quality you can afford)
2 onions finely diced
1 large carrot finely diced
3 sticks celery finely diced
4 cloves garlic crushed
1 tbsp. fresh rosemary finely chopped
100g smoked pancetta cubed (or smoked streaky bacon)
200ml red wine
2 heaped tbsp. tomato puree
1 tbsp. dried oregano
700ml beef stock
Pinch sugar
300g spaghetti pasta
Parmesan cheese for serving
Fresh basil for serving
Method:
1: Fry the beef in a pre-heated large pan and cook for 5-6 minutes over a high heat, try to brown the mince, remove from the pan and set to one side, add the onions, carrot, celery, garlic, rosemary and pancetta and cook for 6-7 minutes before returning the mince into the pan. Pour in the red wine and reduce by half. Add the puree, stock and oregano and stir to combine. Bring up to a simmer then cover and cook over a low heat for 1 hour, season with salt, pepper and sugar to taste. If you like a thicker sauce, remove the lid and cook over a medium heat for 5 minutes.
2: Cook the pasta to the packets instructions, drain then toss through the sauce before serving with a grating of cheese and some fresh basil leaves.
