Indian Spiced Hot Wings

Indian Spiced Hot Wings (serves 2)

Ingredients

  • 8 chicken wings split into drums and flats
  • 1 tbsp. olive oil
  • 1 tsp. garlic and ginger paste
  • 1 tsp. garam masala
  • 1 tsp. dried fenugreek
  • ½ tsp. turmeric
  • Red food colouring (optional)
  • 1 tsp. mint sauce
  • Pinch salt

Sticky Glaze:

  • 2 tbsp. Sweet chilli sauce
  • 1 tbsp. Soy sauce
  • 2 tbsp. Fresh coriander chopped
  • Juice ½ Lime
  • 1 chilli deseeded and chopped

Method

  1. Pop the chicken wings into a bowl, along with the ingredients shown in the recipe. Give it a good toss until the wings are completely coated then place onto the crisp plate within your air, fryer drawer, spray with oil and cook at 200°c for 16 minutes shaking halfway through.
  2. Pour the sweet chilli sauce and soy into a pan over a medium heat, then add in the cooked wings, toss well to coat, then scatter in the fresh coriander and a good squeeze of lime juice. Finally to serve, scatter over as much fresh chilli as you dare.
